Fried Duck |
- 1 whole (900gr) duck, cut into 4 parts
- 4 tablespoons vegetable oil
- 2 bay leaves
- 2 lime leaves
- 1 stalk lemongrass, crushedSeasonings,
- puree: 2 cm fresh ginger
- 2 cm galangal
- 2cm kencur
- 8 cloves garlic
- 1 teaspoon shrimp paste fried
- 1/2 tsp coriander
- 1 tsp pepper
- 1 tsp sugar granules
- 2 tsp salt
Sambal Long Bean Matah Urap
How to make fried duck Bali: Stir duck with Delicate Spices until blended. Let stand for a few hours. Heat oil, put the marinated duck, bay leaves, lime leaves and lemongrass. Stir until the duck stiff and discolored. Pour water, cook over low heat until tender duck meat. Remove, let cool. Heat oil over medium heat much. Fry until dry duck. Remove and drain. Serve with Sambal Long Bean Matah and Urap.
